One thing that sets them apart is being able to call in and order a cut (like fillet) to your exact liking and it is ready when you get there.

The owner first aim is always to please his customers. He is MOST accommodating. If you don't see a product you're looking for in his store, talk to him about it. As was in my case, he'll happily order it for you. He even gave me two items of the product when it came in as a complimentary for steering him to the product. I can't say enough good about this man, his PR, his business techniques or his shop overall. Check it out.
